Serves: 2 Ingredients: 
●       2 salmon fillets 
●       1 cucumber, peeled, chopped 
●       1 little gem lettuce, shredded 
●       2 tablespoons chopped chives 
●       1 avocado, peeled, pitted, chopped 
●       3-4 tablespoons lemon juice 
●       Salt to taste 
●       Pepper to taste Method: Sprinkle salt and pepper over the salmon.  Grill the salmon on a preheated grill until it is cooked. When cool enough to handle, discard the skin and lightly flake the salmon with a fork.  Add cucumber, lettuce, avocado and lemon juice into a bowl and toss.  Divide into 2 plates. Place fillet on the salad on each plate. Sprinkle salt, pepper, lemon juice and chives on the fillet and serve.
